Patisa (soan patisa) is a flaky North Indian sweet of paper-thin gram-flour layers laminated with ghee and sugar — crisp at first bite, then it melts. At Noida Sweets & Bakers in Supertech EcoVillage-1 we make classic patisa and a richer malai patisa, cut into neat squares and topped with almonds.

What is patisa?
Patisa belongs to the soan family — cousins of soan papdi — but is denser and flakier. Gram flour, ghee and sugar are worked into fine layered flakes and set into squares. Good patisa shatters cleanly, never bends.
Classic and malai
Our classic patisa (620 rupees per kg) is crisp and light; malai patisa (670 rupees per kg) is enriched for a softer, creamier crumb. Both are topped with almond shavings — the squares in the photo are ours.
A traveller's sweet
Because it is a dry sweet, patisa keeps beautifully — ideal for gift boxes, courier hampers and carrying to relatives. Pair it with kaju katli in a mixed box.

Shelf life and storage
10–15 days in an airtight box in a cool, dry place — among the longest of traditional sweets. Keep away from humidity to protect the crispness.
