Gulab jamun is a soft, deep-brown sweet made from khoya (reduced milk), fried gently and soaked in cardamom-scented sugar syrup. What makes a great gulab jamun?

Great gulab jamun starts with fresh khoya. The dough is rolled without cracks and fried slowly so the inside cooks through, then rested in warm syrup until it soaks to the centre. Bite one open — it should be soft and juicy all the way through, never doughy.

We make regular gulab jamun and a bite-size small jamun (both 560 rupees per kg) — the small ones are a favourite for parties and plated desserts.

How to serve

Gulab jamun is best gently warmed. Pair it with vanilla ice cream for the classic hot-and-cold dessert, or serve alongside rasmalai on a festive platter.
