What exactly is ghewar?
Think of it as edible lace. The base is simple — flour, chilled water or milk, and pure desi ghee — but the technique is theatre. The result is a round disc, crisp as a biscuit yet airy as a honeycomb, that drinks up just enough syrup to sweeten without going soft. Born in Rajasthan (Jaipur’s halwais made it famous), it travelled with the monsoon festive calendar across North India — and every Sawan it takes over our counter at Supertech EcoVillage-1 too.
How ghewar is made (the 5-minute version)
A cold, thin batter is dripped in a steady stream into a ring of hot ghee. The moment each droplet hits, it sizzles outward into a lacy thread. Drip, sizzle, repeat — layer upon layer — until a golden lattice fills the ring. The disc is lifted, drained, and dipped briefly in single-thread sugar syrup. That’s a plain ghewar. From there:
- Kesar Ghewar — finished with saffron syrup; lighter, crisper, travel-friendly. ₹800/kg
- Malai Ghewar — blanketed with fresh rabri, slivered pista and rose petals; the indulgent bestseller. ₹700/kg
The monsoon itself helps — humid air keeps the batter behaving, which is one reason tradition never moved ghewar out of Sawan.
Malai vs kesar: which one should you pick?

- Eating it today, at home? Malai. The rabri layer is the whole point — cool, creamy, over that crisp lattice.
- Gifting or travelling? Kesar. It stays shatter-crisp for days and won’t mind the car ride to Gurugram.
- First-timer? Kesar first (you taste the honeycomb itself), malai next visit (you taste why it’s the bestseller).

How to serve & store it
Room temperature, always — never microwave a malai ghewar (the rabri is the point, and heat undoes it). Cut in wedges like a pie. Malai: best the same day, 1–2 days refrigerated. Kesar/plain: 2–3 days in a cool, dry spot. Pair kesar ghewar with warm rabri or cold milk and thank us later.
The season: why now is the time
Ghewar’s calendar is short and emotional: it arrives with Sawan, stars in the sindhara gifts of Teej, and takes its final bow at Raksha Bandhan — Friday, 28 August 2026.
