How Indian mithai is made

Great mithai isn’t complicated — but it is careful. Here’s a simple look at how traditional Indian sweets come together, and why freshness and hygiene make all the difference.

It starts with good dairy

Most classic mithai begins with milk — reduced into khoya (for barfi, peda and milk cake) or set into chenna (for rasgulla and rasmalai). The quality of the dairy decides the quality of the sweet, so sourcing matters before anything touches the pan.

Cooked in small batches

Sugar, cardamom, saffron, nuts — the additions are simple, but timing and temperature are everything. We cook in small batches through the day so texture stays soft and flavours stay clean, rather than making huge quantities to sit on a shelf.

Hygiene at every step
